About the coffee ground "waste"
Rotterzwam mainly works with coffee grounds collected from cafés, offices, restaurants and other places across the city. Coffee grounds are produced in huge quantities every single day, yet most people barely think about them once the coffee is made. In Rotterdam alone, large amounts used to disappear directly into residual waste and get burned. Besides coffee grounds, Rotterzwam also experiments with other urban residual streams like brewer’s grain and wood chips. Many of these materials are produced locally and continuously, making them interesting “waste” for circular food production research.
