From coffee grounds to mushrooms and snacks

Rotterzwam transforms urban food waste like coffee grounds into fresh oyster mushrooms and tasty food products. Since 2013, they have been showing that local food systems can work very differently: more circular, more collaborative and much closer to home than most people realise. What started in the basement of the old Tropicana swimming pool in Rotterdam has grown into one of the most iconic circular food initiatives in the Netherlands, without losing the experimental, hands-on energy they started with.

Over de alchemist

Rotterzwam was founded in 2013 by Siemen Cox and Max de Korte, later joined by Mark Slegers. Armed with little more than coffee grounds, bakfietsen and curiosity, they started experimenting with growing mushrooms on urban waste streams. It took months before they successfully managed to grow oyster mushrooms from the collected coffee grounds, but the strange experiment slowly started attracting more and more attention. What makes Rotterzwam special to them is that it never felt like a polished startup with all the answers, but much more like a living experiment powered by people genuinely trying to build a more circular food system together. About the coffee ground "waste"

Rotterzwam mainly works with coffee grounds collected from cafés, offices, restaurants and other places across the city. Coffee grounds are produced in huge quantities every single day, yet most people barely think about them once the coffee is made. In Rotterdam alone, large amounts used to disappear directly into residual waste and get burned. Besides coffee grounds, Rotterzwam also experiments with other urban residual streams like brewer’s grain and wood chips. Many of these materials are produced locally and continuously, making them interesting “waste” for circular food production research.

About the transformation process

At their mushroom farm near the Schiehaven in Rotterdam, Rotterzwam processes these waste streams into substrate for mushroom cultivation. Over the years, the team kept refining the process through hands-on experimentation, testing different growing methods, substrate compositions and mushroom varieties. Today, they work with climate-controlled growing units, collaborate closely with circular grower Gezwam in the The Hague region, and are scaling further through SPORO, a circular substrate factory focused on processing coffee grounds on a much larger scale. Alongside production, knowledge sharing remains an important part of the process through tours, workshops, grow kits and collaborations.

Over hun creaties

Rotterzwam grows fresh oyster mushrooms and transforms them into all sorts of food products like bitterballen, croquettes, dumplings, ravioli, sausage rolls and shoyu sauce. What started with fresh mushrooms eventually expanded into snacks and products that make circular and plant-based food feel more accessible and familiar. For people wanting to experiment at home, Rotterzwam also developed grow kits that allow you to grow oyster mushrooms yourself using your own coffee grounds.

The police raid that made them famous

Long before Rotterzwam became one of the best-known “waste transformation” food initiatives in the Netherlands, they were simply experimenting with mushrooms in the basement of an abandoned tropical swimming pool previously called Tropicana. Then one day, police unexpectedly raided the building. Suddenly cameras, journalists and attention followed, and the strange mushroom-growing experiment became international news almost overnight. Instead of hurting the initiative, the moment helped spread their story far beyond Rotterdam and brought even more curious people into their circular mushroom world.
